Banana bread

2 eggs
2 ripe bananas
60 g butter
2 dl sugar
3 1/5 dl flour
1 tsp vanilla extract (or vanilla sugar)
170 g vanilla skyr
1/2 dl milk
2 tsp baking powder (I use cream of tartar)

 

Directions:
Mix the eggs and sugar until the mixture is light and fluffy.
Melt the butter at low heat and set aside.
Sift the flour and baking soda at least twice and add to the egg mixture.
Purée the banana and add it, with the vanilla sugar (vanilla extract), vanilla skyr, milk and butter, to the mixture. Grease the baking tin and pour the dough into it. I often sprinkle some oatmeal over it, but this is optional.

Bake at 180°C for 45–50 minutes.
